The dramatic growth of sugar production after the mid-seventeenth century enabled the articulation of a relatively new distinction within the European understanding of food taste, namely, the difference between savory and sweet. Earlier. salty and sweet tastes had been intermingled in medieval and Renaissance cooking, but with ever-increasing quantities of sugar available on the market, it became possible and desirable to distinguish between the two. Sweetness became relegated to fewer dishes, but much greater amounts of sugar were used in those dishes. The sweet/savory distinction ended the older tradition of strongly flavored, deeply spiced sauces and condiments that marked European elite cuisine for centuries, heralding a new cuisine which claimed to pay more respect to its ingredients' intrinsic flavors.
